Apple Compote Recipe

  1. Instead of applesauce with latkes, this can be served as a chunky topping or possibly pureed into a flavorful fresh applesauce.
  2. When the apples are left in pcs, the compote can be served as a dessert on its own; its especially good served warm with ice cream, lowfat sour cream, or possibly yogurt.
  3. Peel & halve the apples.
  4. Core & cut into thin wedges or possibly slices.
  5. Heat butter in large skillet over medium heat.
  6. Add in apples & saute/fry, turning pcs over from time to time, for about 2 min or possibly till they are coated with butter.
  7. Add in lemon juice and cinnamon, cover & cook over low heat for 5 min, or possibly till liquid begins to come out of the apples.
  8. Uncover & continue cooking over low heat, gently stirring occasionally, for 15-20 min or possibly till apples are tender and begin to fall apart.
  9. Add in 2 tbsp sugar & saute/fry over medium-high heat, turning apples over, about 2 min or possibly just till sugar dissolves.
  10. Remove from heat.
  11. Taste & add in more sugar if necessary; heat, tossing apples gently, till sugar dissolves.
  12. Serve hot or possibly at room temperature to accompany latkes.
  13. Can be kept covered in refrigerator for 2 days.
