Hussain's Masala scrambled eggs
- 2 medium Tomatoes chopped in small cubes
- 1 medium onion chopped in small cubes
- 1 tbsp coriander leaves finely chopped
- 2 clove garlic cloves finely chopped
- 2 pinch Turmeric powder large pinch
- 1/4 tsp coriander seeds powder (optional)
- 1/4 tsp cumin seeds powder (optional)
- 1/4 tsp Red chilly powder (optional)
- 1 tbsp olive oil
- Put the oil in a non stick pan large enough for 4 eggs
- Add the chopped onions and stir for 2 minutes and add the chopped garlic
- As the onions become transparent add the tomatoes and stir for 5 minutes.
- Add all the spices to the pan and stir for 2 minutes and add the eggs, salt and chopped coriander and stir well.
- Garnish with some coriander or tomatoe ketchup.
- Serve with plain or toasted slice bread.
