Blue Cheese Dip With Caramelized Onions and Bacon
- 13 cups Chopped White Onion
- 1/4 sticks Butter
- 3 strips Crisp Bacon
- 1 teaspoon Freshly Squeezed Lemon Juice
- 7 ounces, weight Greek Yogurt
- 1/2 cups Mayonnaise
- 4 ounces, weight Blue Cheese
- 1/2 teaspoons Cholula Sauce
- 1/2 teaspoons Black Pepper
- 1 teaspoon Minced Garlic
- 1/2 teaspoons Fresh Chives
- Saute onions in the butter for around 10 minutes until golden brown.
- Set aside a spoonful to top the dip.
- Cook bacon until crispy.
- Crumble into pieces and set aside.
- Place the onion, lemon juice, Greek yogurt, mayonnaise, blue cheese, Cholula, and pepper in a medium mixing bowl.
- Mix on high until mixture is only slightly lumpy and all ingredients are blended.
- Transfer to a serving bowl.
- Top with bacon crumbles, chives, and remaining caramelized onions.
- Chill 2 hours to allow flavors to combine.
