Quick and Easy Baby Blue Salad

  1. Place pecans on baking sheet (I covered the sheet with parchment paper for easy clean-up).
  2. Coat pecans with cooking spray.
  3. Combine sugar and Creole seasoning and sprinkle over pecans, tossing gently.
  4. Bake at 350 degrees for 15 minutes or until pecans are golden brown, stirring once.
  5. Cool thoroughly.
  6. Gently toss together greens, mandarin oranges, strawberries, balsamic vinaigrette, and crumbled blue cheese and top with pecans.
