Quick and Easy Baby Blue Salad
- 1 12 cups pecan halves
- 2 tablespoons sugar
- 1 tablespoon creole seasoning
- 2 (5 ounce) packages mixed salad greens
- 1 (11 ounce) can mandarin oranges, drained
- 1 pint strawberry, quartered
- 12 cup balsamic vinaigrette
- 1 (4 ounce) packagecrumbled blue cheese
- Place pecans on baking sheet (I covered the sheet with parchment paper for easy clean-up).
- Coat pecans with cooking spray.
- Combine sugar and Creole seasoning and sprinkle over pecans, tossing gently.
- Bake at 350 degrees for 15 minutes or until pecans are golden brown, stirring once.
- Cool thoroughly.
- Gently toss together greens, mandarin oranges, strawberries, balsamic vinaigrette, and crumbled blue cheese and top with pecans.
