Spinach and Cheese Ravioli

  1. Add flour and eggs in a large bowl and mix to make a dough.
  2. Add water if necessary, but dough should be fairly stiff.
  3. Use a pasta machine to roll dough into sheets, patting with more flour if its too sticky.
  4. Crank out sheets of pasta and let sit for 10 minutes.
  5. In a small sauce pan, warm cheese.
  6. Cut spinach into small diced pieces and add to cheese.
  7. Add crushed garlic and herbs.
  8. Dollop small spoonfulls onto half of the dough sheets.
  9. Place other dough sheets on top of the dollops and cut around.
  10. Seal the individual raviolis with your fingers or with a fork.
  11. Boil a large pot of water and salt, and place 5-6 ravioli at a time.
  12. When they reach the top of the water theyre done.
  13. Let them rest on wax paper for a minute or so after they are done, then serve with pasta sauce.
