Sweetheart Fudge Pie
- 1/2 c. butter or margarine, softened
- 3/4 c. firmly packed brown sugar
- 3 eggs
- 1 (12 oz.) pkg. semi-sweet chocolate morsels, melted
- 2 tsp. instant coffee granules
- 1 tsp. rum extract
- 1/2 c. all-purpose flour
- 1 c. coarsely chopped walnuts
- 1 unbaked 9-inch pastry shell
- piped whipped cream and chopped walnuts (for garnish)
- Cream the butter.
- Gradually add brown sugar, beating at medium speed of an electric mixer until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add melted chocolate, coffee granules and rum extract; mix well.
- Stir in flour and 1 cup chopped walnuts.
- Pour mixture into pastry shell. Bake at 375u0b0 for 25 minutes.
- Cool completely.
- Chill.
- Garnish, if desired.
- Yields one 9-inch pie.
