Betty Randall's Christmas Cookies
- 5 cups flour
- 1 cup brown sugar
- 1 cup granulated sugar
- 1 cup Crisco
- 3 eggs
- 1 cup buttermilk
- 2 teaspoons baking soda
- 1 teaspoon salt
- 4 teaspoons vanilla
- Preheat oven to 400 degrees.
- In a large bowl sift together flour, soda and salt.
- In another large bowl, mix sugar, shortening, eggs and vanilla until creamy and light.
- Add buttermilk and dry ingredients alternately to the sugar/shortening mixture; mix well.
- Wrap and chill dough about 3 hours before rolling out.
- Roll dough to about 1/4 inch thick.
- Cookies will be soft.
- Cut out with favorite cutters.
- Bake at 400 degrees for 10-12 minutes.
- Don't let them get too brown.
- Remove to wire rack.
- When cool, frost with favorite cookie icing; decorate immediately.
