Cajun Fettuccine

  1. In a large pan over medium heat, brown the sausage in the olive oil; then add the shrimp and cook until the shrimp turns pink.
  2. Stir in the garlic and cayenne; cook just until you can smell the garlic.
  3. Use the sherry to deglaze the pan.
  4. Add the half & half and chicken stock.
  5. Heat to a slow boil.
  6. Then add the chopped scallions.
  7. Use the green parts only for color.
  8. Add the parmesan cheese and stir until thick about 1-2 minutes.
  9. Serve over warm fettuccine.
  10. Garnish with more chopped scallions.
