Cajun Fettuccine
- 1 tbsp. olive oil
- 3/4 cup smoked sausage, sliced
- 12 md. shrimp
- 2 tsp. fresh garlic, minced
- 1/2 tsp. cayenne pepper
- 2 tbsp. dry sherry
- 1/3 cup half & half
- 1/3 cup chicken stock
- 1/4 cup scallions, chopped
- 2/3 cup Parmesan cheese
- 1-1/2 pint cooked fettuccine
- In a large pan over medium heat, brown the sausage in the olive oil; then add the shrimp and cook until the shrimp turns pink.
- Stir in the garlic and cayenne; cook just until you can smell the garlic.
- Use the sherry to deglaze the pan.
- Add the half & half and chicken stock.
- Heat to a slow boil.
- Then add the chopped scallions.
- Use the green parts only for color.
- Add the parmesan cheese and stir until thick about 1-2 minutes.
- Serve over warm fettuccine.
- Garnish with more chopped scallions.
