Apple Stuffed Pork Chops

  1. Trim fat from pork chops and slice as deep a pocket as possible.
  2. Salt and pepper the insides of the pockets.
  3. Saute the onion and celery in margarine.
  4. Add bread crumbs, apples and parsley to the pan.
  5. Stir and remove from heat.
  6. Spoon into the pockets and secure with toothpicks.
  7. Heat oil in a skillet on medium high and brown both sides of the chops.
  8. Place in a greased 9x13 pan and cover with foil.
  9. Bake at 350 degrees F for 30 minutes.
  10. Uncover and bake for 30 more minutes.
