Bacon And Brown Sugar Meatloaf
- cooking spray
- 1/2 cup ketchup
- 1/2 cup packed brown sugar
- 1 1/2 pounds ground beef
- 3/4 cup crushed unsalted saltine crackers
- 2 eggs
- 3/4 medium onion, chopped
- 3 cloves garlic, minced, or more to taste
- 2 tablespoons Dijon mustard
- salt and pepper to taste
- 2 tablespoons Worcestershire sauce
- 6 slices bacon
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a loaf pan with cooking spray.
- Spread ketchup over the bottom of the loaf pan; spread brown sugar over the ketchup.
- Combine ground beef, crackers, eggs, onion, garlic, mustard, Worcestershire sauce, salt, and pepper in a bowl. Form mixture into a loaf and place in the prepared pan. Lay bacon strips on top in a lattice or other pattern.
- Bake in the preheated oven until juices run clear and bacon is cooked, about 1 hour.
