Celery, Cucumber, Fennel and Radish Salad with Vinaigrette
- 4 tablespoons white wine vinegar
- 3 tablespoons olive oil, extra-virgin
- 1/2 tablespoon honey or sugar, or more or less to taste
- 2 1/4 teaspoons whole-grain mustard
- 1/2 teaspoon salt or to taste
- 1 x black pepper freshly ground, to taste, optional
- 1 each fennel bulb top removed, and thinly sliced
- 1 bunch radishes trimmed, halved and thinly sliced
- 1 each cucumbers hallved and thinly sliced
- 4 each celery stalks thinly sliced
- 1 cup celery leaves optional, coarsely chopped
- 1 cup cilantro flat, coarsely chopped
- 12 each romaine lettuce leaves, torn
- Add vinegar, oil, honey or sugar, mustard and salt in a large bowl, and whisk until well blended.
- Add fennels, radishes, cucumbers, celery, celery leaves, cilantro and lettuce into the large bowl with the vinaigrette, then toss to well coated.
- Serve.
