Russian Ground Pork Cutlets

  1. Get your most loved skillet and put in the oil and butter.
  2. Meanwhile, in a bowl, mix together ground pork, egg, parmesan and parsley.
  3. The mixture will seem pretty wet, so add in about 1/4 cup of whole wheat breadcrumbs until the mixture is still a little wet.
  4. Pour out the remaining 1/2 cup of breadcrumbs onto a plate and divide the pork into 4.
  5. Take a quarter of the mixture and form it into a patty, then roll the patty in the breadcrumbs.
  6. Repeat with the other 3 patties.
  7. Fry on medium heat about 20 minutes, or until cooked through, flipping halfway through the cooking time.
  8. Serve with whatever you like, but mashed potatoes and asparagus are always a win in my house.
  9. Or just put it in between 2 slices of buttered artisan bread and eat as a sandwich.
  10. Yum.
