Russian Ground Pork Cutlets
- 1 Tablespoon Vegetable Oil
- 1 Tablespoon Butter
- 1 pound Ground Pork
- 1 whole Egg
- 1/2 cups Freshly Grated Parmesan
- 4 sprigs Fresh Finely Chopped Parsley
- 3/4 cups Whole Wheat Bread Crumbs, Divided
- Get your most loved skillet and put in the oil and butter.
- Meanwhile, in a bowl, mix together ground pork, egg, parmesan and parsley.
- The mixture will seem pretty wet, so add in about 1/4 cup of whole wheat breadcrumbs until the mixture is still a little wet.
- Pour out the remaining 1/2 cup of breadcrumbs onto a plate and divide the pork into 4.
- Take a quarter of the mixture and form it into a patty, then roll the patty in the breadcrumbs.
- Repeat with the other 3 patties.
- Fry on medium heat about 20 minutes, or until cooked through, flipping halfway through the cooking time.
- Serve with whatever you like, but mashed potatoes and asparagus are always a win in my house.
- Or just put it in between 2 slices of buttered artisan bread and eat as a sandwich.
