Honey Cake
- 1 14 cups honey
- 1 cup oil
- 2 teaspoons instant coffee
- 12 cup plus 2 tbsp. boiling water (dissolve coffee in this)
- 1 14 cups dark brown sugar
- 4 eggs
- 4 cups self rising flour
- 1 teaspoon heaping cinnamon
- 1 teaspoon heaping mixed spice
- 1 teaspoon ginger
- 1 teaspoon baking soda
- 1 (8 ounce) package cream cheese
- 12 cup butter
- 34 cup chopped pecans
- 1 teaspoon vanilla
- 1 lb confectioners' sugar
- Beat together the honey, oil , coffee and sugar.
- Beat in the eggs and then the rest of the ingredients sifted together.
- Bake in greased shallow pan 12x10x2 at 325F for 1 hour.
- Cake is done when toothpick inserted in center comes out clean.
- PECAN ICING:.
- Soften the cream cheese and butter.
- Mix well with remaining ingredients.
- Spread on cake.
