Veal Scallopini Ala Marsala Recipe

  1. Cut veal into large pcs.
  2. Season both sides lightly with salt and pepper; sprinkle with flour.
  3. Saute/fry veal in butter till well browned on both sides.
  4. Stir in wine and mushrooms; cook 1 minute over medium heat, stirring frequently.
  5. Place veal on serving platter.
  6. Add in water to drippings, stirring and scraping bottom of skillet to loosen browned bits.
  7. Cook till bubbly; pour over veal.
  8. Yield: 4-5 servings.
