Thai Style Fish

  1. Combine peanut butter, curry paste, juice and 1 tablespoon of water.
  2. Spread onto fish, sprinkle with coriander.
  3. Seal snapper fillets in individual foil parcels.
  4. Cook for 10 minutes at 180C or until tender.
  5. Serve with Minted Tomato Salsa.
  6. Minted Tomato Salsa: Combine all ingredients, season to taste.
  7. Chill.
