Thai Style Fish
- 1/4 cup KRAFT Smooth Peanut Butter
- 2 tablespoons red curry paste
- 1 tablespoon lime juice
- 4 (150g) snapper fillets
- 3 tablespoons finely chopped coriander
- minted tomato salsa
- 3 tomatoes, peeled and diced
- 1/4 cup diced red shallot
- 1 tablespoon mint leaves, finely chopped
- 1 tablespoon lime juice
- 1 tablespoon extra virgin olive oil
- Combine peanut butter, curry paste, juice and 1 tablespoon of water.
- Spread onto fish, sprinkle with coriander.
- Seal snapper fillets in individual foil parcels.
- Cook for 10 minutes at 180C or until tender.
- Serve with Minted Tomato Salsa.
- Minted Tomato Salsa: Combine all ingredients, season to taste.
- Chill.
