Chocolate Chip Ice Cream Sandwiches

  1. Combine sweetened condensed milk and vanilla; mix well.
  2. Fold in whipped cream and chips.
  3. Pour into 9x5-inch loaf pan; cover.
  4. Freeze 6 hours or until firm.
  5. Scoop about 1/4 cup ice cream onto bottom of 1 cookie; top with another cookie, top side up.
  6. Press gently.
  7. Wrap tightly in plastic wrap.
  8. Repeat for remaining sandwiches.
  9. Store in freezer.
  10. TIPS: Do not use non-dairy whipped topping in place of whipping cream!
  11. Replace the chocolate chip or chocolate wafer with any of your favourites.
  12. For mint chocolate chip ice cream, substitute peppermint extract for vanilla extract.
