Blondie's Buttermilk Pie

  1. Preheat oven to 350.
  2. Prepare your crust and chill before rollng it out.
  3. In a medium bowl, beat the eggs.
  4. In a large bowl, combine the eggs with the melted (not hot) butter, sugar, flour, buttermilk, vanilla, nutmeg and salt.
  5. Mix on low until smooth.
  6. You can also mix this by hand.
  7. Pour into the pie crust.
  8. Bake for 50 to 60 minutes, until it gets puffy and golden brown.
  9. A toothpick inserted in the center should come out clean.
  10. It will bubble alot as it cooks, but as it gets closer to being fully baked, the bubbles will become less.
  11. Cool completely on a wire rack.
  12. Serve or refrigerate.
