Tex-Mex Vegetarian Tortilla Pie

  1. Heat oven to 425F.
  2. Spray 9-inch pie plate with cooking spray; line with tortillas, overlapping as necessary to completely cover bottom and side of pie plate.
  3. Sprinkle half the cheese onto bottom of crust; top with peppers and cilantro.
  4. Whisk eggs, salsa, milk, flour and baking powder until blended; slowly pour over filling in crust.
  5. Top with remaining cheese.
  6. Bake 25 min.
  7. or until knife inserted in centre comes out clean.
  8. Let stand 5 min.
  9. before cutting to serve.
