Tom Yum Goong

  1. Wash shrimp and drain thoroughly.
  2. Put water in a large sauce pan.
  3. Bring to a boil over high heat.
  4. Add shrimp and cook for 10 to 15 minutes.
  5. Add remaining ingredients EXCEPT FOR LEMON JUICE AND CORIANDER LEAVES.
  6. Simmer on low heat 8 to 10 minutes longer.
  7. Add lemon juice into the soup.
  8. Sprinkle with fresh coriander before serving.
  9. Serve with rice.
