Tuna Mornay

  1. Cook rice in a saucepan of boiling water for 10-12 minutes until tender.
  2. Drain and toss through spinach.
  3. Spread mixture over the base of a greased shallow ovenproof dish.
  4. Whisk together milk, cheese spread and flour in a saucepan over a low heat until smooth and thickened slightly.
  5. Remove from heat and stir in tuna, parsley and seasonings.
  6. Pour evenly over rice mixture.
  7. Combine breadcrumbs and cheese and sprinkle over the tuna mixture.
  8. Bake at 190C for 20 minutes or until crumbs are golden brown.
  9. Serve with a side salad.
