Healthy red beet and chickpea salad
- 1 can chickpeas
- 3 medium red beets
- 1 red capsicum
- 1 tbsp dill
- 1 juice of one lime
- 1 salt and pepper to taste
- 1 tbsp white balsamic vinegar
- 2 tbsp olive oil
- Dice beets and capsicum
- Drain chickpeas and mix with veggies
- Add oil, vinegar, lime juice, dill and salt and pepper
- Serve with feta cheese if you like :-)
