Stuffed chicken spinach and pepper jack cheese
- 2 boneless chicken breasts
- 1 cup spinach
- 1 block pepper jack cheese
- 2 clove garlic
- 1 box panko
- 1 onion, chopped
- 1 salt and pepper
- 2 oz olive oil
- 2 eggs
- 1 cup milk
- Butterfly chicken breasts set aside
- Saute chopped onions and spinach in olive oil add garlic once onions are soft so your garlic doesn't burn add salt and pepper to taste
- Stuff chicken breasts with spinach mixture and slices of pepper jack cheese
- Make your egg wash with egg and milk
- Dip stuffed chicken in egg wash then cover with panko bread crumbs
- Cook chicken in 2 inch pan at 350 for 20 minutes ....eat and enjoy
