Kickin Corn Salsa
- 1 bag Frozen Corn
- 1/4 cups Red Bell Pepper
- 1/2 cups Red Onion
- 1 container Chopped Jalapeno Pepper (small Can Will Do, Do Not Drain) Or You Can Use Fresh (about 2 Regular Size)
- 2 whole Limes, Juiced
- 1/4 cups Fresh Cilantro (don't Use Dried, There's A Big Difference)
- Cayenne Pepper (use As Little Or As Much As You Want, Depends On How Hot You Want It, I Use A Lot!)
- 1 can Black Beans, Drained (optional)
- Thaw corn.
- Finely dice red pepper, onion, and jalapeno peppers.
- Add lime juice (I scrape the pulp and add also).
- Mix in cilantro, cayenne, and black beans.
- Add thawed corn.
- Refrigerate to let flavors meld together (at least 1 hour.
- Serve with Fritos Scoops or Tostitos.
- Can also be used on taco salad.
- Super Yummy!
