Ginger Cabbage

  1. In a large heavy skillet with lid, warm canola oil over medium-low heat.
  2. Add the ginger, cinnamon, and cloves.
  3. Cook, stirring, for 10 to 15 seconds.
  4. Add the cabbage, apples, maple syrup, and salt.
  5. Stir, reduce heat to low, cover, and cook for about 30 minutes.
  6. After the 30 minutes, add the vinegar and increase heat to medium.
  7. Cook for about 5 minutes, or until most of the liquid evaporates.
  8. Sprinkle each serving of cabbage with 2 tablespoons of the pumpkin seeds.
