Pacific Saury Simmered in Ginger Rich, Sweet and Salty Straight from Your Pressure Cooker
- 2 Pacific saury
- 1 piece Ginger
- 100 ml Sake
- 100 ml Water
- 3 tbsp Soy sauce
- 2 tbsp Mirin
- 1 tbsp Sugar
- Remove the fish heads.
- With the tip of a knife, press down on the guts sticking out and pull the fish body to the left.
- Cut the fish into 4 equal pieces and wash away the blood.
- Julienne the ginger.
- Bring the ingredients to a boil in a pressure cooker, and add the ginger and fish.
- Cover with a lid and cook over strong heat.
- Turn down the heat to low when it starts to steam and cook for 15 minutes.
- Stop the heat and leave until the pressure drops.
- Remove the lid and simmer until the broth reduces.
- Then it's done.
