Pacific Saury Simmered in Ginger Rich, Sweet and Salty Straight from Your Pressure Cooker

  1. Remove the fish heads.
  2. With the tip of a knife, press down on the guts sticking out and pull the fish body to the left.
  3. Cut the fish into 4 equal pieces and wash away the blood.
  4. Julienne the ginger.
  5. Bring the ingredients to a boil in a pressure cooker, and add the ginger and fish.
  6. Cover with a lid and cook over strong heat.
  7. Turn down the heat to low when it starts to steam and cook for 15 minutes.
  8. Stop the heat and leave until the pressure drops.
  9. Remove the lid and simmer until the broth reduces.
  10. Then it's done.
