Italian Zucchini Casserole
- 3 medium zucchini, sliced
- 3 tablespoons olive oil
- 1 medium onion
- 1 (28 ounce) can diced tomatoes
- 1 tablespoon fresh basil
- 1 12 teaspoons minced fresh oregano
- 12 teaspoon garlic salt
- 14 teaspoon pepper
- 1 12 cups dry bread stuffing mix
- 12 cup grated parmesan cheese
- 34 cup shredded mozzarella cheese
- In a large skillet, cook zucchini in 1 tablespoons olive oil; drain and set aside.
- In same skillet saute onion,and garlic.
- Add tomatoes, basil, oregano, garlic salt, and pepper.
- simmer for 10 minutes.
- Place in a baking dish and gently stir in zucchini.
- Top with stuffing and Parmesan cheese.
- Bake at 350F for 20 minutes covered.
- Uncover and sprinkle with mozzarella cheese and bake 15 minutes longer.
