Italian Zucchini Casserole

  1. In a large skillet, cook zucchini in 1 tablespoons olive oil; drain and set aside.
  2. In same skillet saute onion,and garlic.
  3. Add tomatoes, basil, oregano, garlic salt, and pepper.
  4. simmer for 10 minutes.
  5. Place in a baking dish and gently stir in zucchini.
  6. Top with stuffing and Parmesan cheese.
  7. Bake at 350F for 20 minutes covered.
  8. Uncover and sprinkle with mozzarella cheese and bake 15 minutes longer.
