Mom's Wedding Soup

  1. Make 1" meatballs and brown in the oven or on the stovetop in olive oil.
  2. Combine meatballs, chicken broth, bouillon and spinach in a soup pot.
  3. Simmer for 30 min (as desired.)
  4. Skip this step for the meatless version.
  5. Add pasta and cook per package instructions until done.
  6. Beat eggs with a dash of water and slowly add to simmering soup while stirring.
  7. Add parmesan and serve.
