Instant Pot® Candied Sweet Potatoes
- 3 sweet potatoes, cut into 3/4 inch slices then cubed
- 2 tablespoons cornstarch
- 1/4 cup maple syrup
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 tablespoons margarine
- 1 cup water
- Toss sweet potatoes with cornstarch in a resealable plastic bag until evenly coated.
- Place coated sweet potatoes in a multi-functional pressure cooker (such as Instant Pot(R)). Cover with maple syrup, white sugar, brown sugar, and margarine. Pour in water and stir. Close and lock the lid.
- Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
