Stir Fried Baby Bok Choy
- 2 tablespoons vegetable oil
- 2 teaspoons ginger, chopped
- 1 lb baby bok choy
- 14 cup chicken stock
- 1 tablespoon soy sauce
- salt and pepper
- Heat a wok or large skillet over high heat.
- Add oil.
- Add ginger and stir fry for 30 seconds.
- Add bok choy and stir fry for 1 minutes or until beginning to wilt.
- Add chicken stock and soy sauce to pan.
- Cover, turn heat to low and cook for 2 - 3 minutes or until bok choy is tender with a little bite to it.
- Season to taste with salt and pepper.
