Greek Marinated Fish Recipe
- 2 lbs. red snapper or possibly sole fillets
- 1/3 c. extra virgin olive oil
- Flour seasoned with salt & pepper
- 3 cloves garlic, chopped
- 1/2 teaspoon rosemary
- 1/2 c. white wine vinegar
- Dip fish in seasoned flour, coating both sides.
- Heat the oil in large frying pan and fry the fish, turning to brown on both sides.
- Remove to a warm platter.
- Drain off excess oil from pan; add in garlic, rosemary and vinegar.
- Bring to a boil and let simmer a few min.
- Pour mix over the fish, serve warm.
