Chicken and Lemon-Broccoli Alfredo *
- 4 small skinless, boneless chicken breast halves
- 8 oz mushrooms, halved
- 1 tbsp Olive oil or cooking oil
- 1 Lemon
- 3 cup Fresh broccoli florets
- 10 oz Container refrigerated light Alfredo pasta sauce
- 1/8 tsp ground black pepper
- Season chicken with salt and pepper, in a large skillet cook chicken and mushrooms in hot oil over medium heat for 4 minutes turning once.
- Step
- Meanwhile, shred 2 teaspoon lemon peel; set aside, slice lemon, add broccoli and Lemon slices to skillet.
- Cook covered for 8 minutes or until chicken is no longer pink.
- Step
- Place chicken on 4 plates.
- Add Alfredo sauce, lemon peel, and 1/8 teaspoon pepper to skillet; heat through serve sauce with chicken and enjoy!
