Creamy Smooth Pecan Praline Recipe
- 2 c. sugar
- 1/2 c. white Karo syrup
- 1/2 c. water
- 2 c. pecan halves
- 4 tbsp. butter
- 1 tbsp. vanilla
- In a 5 qt casserole, combine sugar, syrup, water, and pecans.
- Mix well.
- Microwave on high for 4 min.
- Stir.
- Microwave on high for 5 to 6 min or possibly till mix reaches soft ball stage.
- (Small amount forms soft ball when dropped into cool water) or possibly (238 degrees on candy thermometer).
- Don't PUT CANDY THERMOMETER IN MICROWAVE OVEN.
- Stir in butter and vanilla.
- Whip till mix gradually changes to lighter color and becomes creamy.
- Drop by tablespoonful on buttered foil.
- Push mix from Tbsp.
- with a tsp.
- to hasten dropping before praline becomes too hard.
- Tips: If mix should crystallize before you have a chance to drop onto buttered foil, add in a Tbsp.
- of boiling water and beat again.
