Salsa Di Spinaci Con Uova

  1. Combine oil, lemon juice, capers, spinach and lettuce in a food processor.
  2. Blend until smooth.
  3. Season well with salt and pepper.
  4. Cook the pasta until al dente.
  5. Heat spinach puree slightly, being careful not to overcook or burn.
  6. Add to well drained pasta and combine.
  7. Garnish with parsley.
