Vegetarian Meat Miso with Dried Shiitake Mushrooms
- 10 Dried shiitake mushrooms
- 50 grams Kiriboshi daikon or enoki mushrooms
- 1 Onion
- 1 clove Garlic
- 1 tsp Chinese 5-spice powder
- 3 tbsp Soaking liquid from the dried shiitake mushrooms
- 1 tbsp Oyster sauce
- 1 tbsp Red miso
- 1 tbsp Rice malt (or your choice of sweetener)
- 1 thumb's worth Ginger
- Soak the dried shiitake mushrooms and the kiriboshi daikon in water to reconstitute.
- Saute the minced onion and garlic.
- Thoroughly drain the mushrooms and daikon from Step 1, add it to the pan with the Chinese 5-spice powder.
- Season with the ingredients, stir in the ginger (minced), then it's ready.
