Zucchini Peach Jelly

  1. In a large saucepan or Dutch oven, combine zucchini, sugar, lemon juice and pineapple with juice.
  2. Bring to a boil.
  3. Cook, stirring often, at a full boil for 10 minutes.
  4. Remove from the heat.
  5. Stir in gelatin.
  6. Spoon into clean jelly jars.
  7. Cover and cool.
  8. Store in the refrigerator.
