Chicken Vegetable Stir Fry Recipe
- 1 1/2 teaspoon peanut or possibly vegetable oil, divided
- 2 tbsp. green onion
- 2 garlic cloves, chopped
- 1/2 c. sliced mushrooms
- 1/4 c. red bell pepper strips
- 1/2 c. broccoli
- 1/2 teaspoon sesame oil
- 1/2 pound chicken cutlets, cut into 1/4 inch thick strips
- 2 teaspoon soy sauce
- 1 c. cooked long grain rice
- In small skillet, heat 1/2 tsp.
- oil over high heat.
- Add in onion and garlic, saute/fry till onion is tender, 2 to 3 min.
- Add in vegetables and cook, stirring quickly and frequently till tender crisp, 2 to 3 min.
- Remove vegetables from pan and set aside.
- In same pan, heat together sesame oil and remaining tsp.
- peanut oil.
- Add in chicken and stir fry till chicken begins to brown, 3-5 min.
- Return vegetables to skillet, add in soy sauce and cook, stirring constantly, till heated through, 1 to 2 min longer.
- Serve with warm rice.
- Serves 2.
