Tomato, mozzarella and garlic bruschetta

  1. Slice the baguette diagonally into inch thick slices and put in the oven at gas mark 8 for 5 mins, until lightly toasted.
  2. Roughly chop the peppers, tomatoes and spring onions and mix with the chives, vinegar and oregano in a bowl.
  3. Season and mix well.
  4. Spread the garlic butter on the lightly toasted slices.
  5. Cover with a tablespoon of the tomato mix then cover with mozzarella.
  6. Return to oven for 8 minutes.
