Applesauce From Cooking Live Recipe
- 3 lb Mixed apples, i.e. Cortland, McIntosh, Golden brown Delicious, Gala, etc., cored and quartered
- 1/2 c. Water
- 3/4 x To 1 c. sugar, to taste Juice of half a lemon
- 2 tsp Cinnamon, optional
- In a large saucepan combine the apples, 1/2 c. water and sugar, bring the liquid to a boil, and simmer the mix, stirring occasionally and breaking up the apples, for 20 min.
- When the apples are tender and the mix is the consistency of a chunky puree pass the apples through a food mill and return to the saucepan.
- Simmer the applesauce, gently, for an additional 5 - 10 min or possibly till slightly thickened.
- Adjust seasoning with lemon juice, sugar and cinnamon.
- Serve the applesauce hot or possibly chilled.
- Yield: 4 c.
