Macrobiotic Lotus Root Tea

  1. Grate the lotus root and ginger and squeeze out the juice to make the tea.
  2. In a small saucepan, add the juice from lotus root and ginger, add the water and a smidgen of salt (measured by scooping it with tips of two chopsticks), then bring to a boil.
  3. Drink up while it's hot.
  4. When you have a high fever (38C or more) and cough, it's best to drink fresh lotus root tea.
  5. For that, add 1 teaspoon of the juice from grated ginger and a tiny smidgen of salt (just a few grains scooped onto the tip of a chopstick.)
  6. Use the grated ginger as filling for oyaki rice pancakes or hamburgers.
