Honey Dijon Curry Chicken
- 6 pieces Chicken Breast Bone In Or Boneless
- 1/4 cups Chopped Yellow Onion
- 1 clove Garlic, Minced
- 1/4 cups Butter Or Margarine
- 1/4 cups Honey
- 1/4 cups Dijon Mustard
- 2 Tablespoons Chutney
- 1 teaspoon Curry
- 1/4 cups Golden Raisins
- Preheat oven to 375 degrees.
- Prepare chicken by placing in a baking dish large enough to accommodate the chicken breasts.
- Use a saute pan to melt butter using medium heat.
- Add onions and garlic.
- Saute until the onions are transparent.
- Add honey, Dijon mustard, chutney and curry to the saute pan and stir until fully mixed.
- Pour evenly over the chicken.
- Top it all off by sprinkling the raisins over the chicken.
- Bake at 375 degrees for 45 minutes (slightly less time for boneless breasts).
- This dish freezes well for leftovers.
