Chocolate Truffles
- 200 grams favourite chocolate (milk, white or dark)
- 100 grams favourite jam/preserve
- 1 tbsp favourite port, whiskey or vanilla extract
- 1 cup cocoa powder (if using white chocolate use icing sugar)
- 1 dash decorations to top
- melt half the chocolate in a bowl over boiling water or on a low setting in the microwave
- add the jam and liquid.
- stir until completely combined
- put in the fridge for half hour until firm
- dust your hands with cocoa powder and using a teaspoon, get a half golf ball sized amount and roll in your hands.
- if the mix is too loose then do your best then freeze for an hour then reball for a smoother rounder finish
- melt the other half of chocolate.
- sieve the cocoa powder into a shallow bowl
- roll the balls to lightly cover in cocoa.
- then using a toothpick to hold them, cover in melted chocolate and place spaced apart on a plate
- decorate as you cover them before the chocolate hardens.
- leave to harden in a cool place but putting in the fridge will make them look dull
- I used dark chocolate with plum jam and mint extract and milk chocolate with strawberry jam and vanilla extract then covered both types in a variation of milk and white chocolate.
- I used coloured sugar, coloured balls, orange zest and cocoa powder to decorate
