San Juan Curry

  1. In a medium saucepan over low heat, melt butter, cook onion and apple until onion is soft and translucent.
  2. Blend in flour, curry powder, ginger and chili powder.
  3. Cook and stir for approximately 2 minutes.
  4. Add Stock and cream, stirring to blend.
  5. Cook for about ten minutes, stirring occasionally.
  6. When sauce begins to thicken, add meat.
  7. Cook over low heat to warm meat through.
  8. Salt and pepper to taste and serve.
