Honey Bread
- 6 to 6 1/2 c. unbleached white flour
- 1 envelope active dry yeast
- 2 Tbsp. softened butter
- 2 tsp. salt
- 1 c. very warm water
- 1 c. milk
- 3 Tbsp. honey
- vegetable oil
- 1 egg
- Combine 1 cup flour and yeast in bowl of electric mixer.
- Mix well.
- Cut butter into small bits.
- Add with salt to bowl.
- Slowly pour in very warm water beating at low speed for 1 minute scraping inside of bowl often.
- Add milk, honey and 2 cups flour.
- Blend well for 2 minutes.
- Remove bowl from mixer.
- Stir in enough remaining flour to make a soft dough (about 2 1/2 cups).
- Use remaining flour for kneading.
- Turn dough out onto generously floured board.
- Sprinkle top generously with flour.
- Knead dough 5 to 10 minutes until smooth and elastic.
- Use as little flour as possible.
- Put dough in a lightly oiled medium size bowl.
- Turn dough over once and cover with clean towel.
- Put bowl in a warm place away from drafts.
