Claire's Pizza
- 8 oz Shredded mozzarella
- 1/4 cup Julienned sundried tomatoes
- 5 Chopped basil leaves
- 1/3 can Paul Newman Vodka Sauce
- 1/4 cup Grated parmesan
- 2 1/2 cup Flour
- 1 cup Lukewarm water
- 2 tbsp Olive oil
- 2 tsp Active dry yeast
- 1 tsp Salt
- 1 Polenta for sprinkling
- Proof yeast in lukewarm water.
- Mix in flour and remaining dough ingredients a little at a time until a soft ball of dough is formed
- Turn out the dough onto a floured surface and knead for 5-8 minutes or until consistency is even and there is good elasticity.
- Return dough to oiled bowl and cover with either a damp towel or seran wrap and let rise at room temperature for about 1 hour or until doubled.
- Preheat oven to 400.
- Punch down dough and roll out til it is the desired thickness (about half an inch).
- Sprinkle polenta on cooking sheet and place the dough on it
- Spread tomato sauce on dough.
- Add parmesan, basil and pine nuts.
- Place on middle rack and cook for about eighteen minutes.
- Add sundried tomatoes to cooking pizza and continue to cook for about 4 minutes or until crust starts to brown.
- Remove pizza from oven.
