Claire's Pizza

  1. Proof yeast in lukewarm water.
  2. Mix in flour and remaining dough ingredients a little at a time until a soft ball of dough is formed
  3. Turn out the dough onto a floured surface and knead for 5-8 minutes or until consistency is even and there is good elasticity.
  4. Return dough to oiled bowl and cover with either a damp towel or seran wrap and let rise at room temperature for about 1 hour or until doubled.
  5. Preheat oven to 400.
  6. Punch down dough and roll out til it is the desired thickness (about half an inch).
  7. Sprinkle polenta on cooking sheet and place the dough on it
  8. Spread tomato sauce on dough.
  9. Add parmesan, basil and pine nuts.
  10. Place on middle rack and cook for about eighteen minutes.
  11. Add sundried tomatoes to cooking pizza and continue to cook for about 4 minutes or until crust starts to brown.
  12. Remove pizza from oven.
