Southwestern Bean Soup
- 1 lb dry black beans, washed
- 6 cups beef broth or 6 cups beef bouillon
- 1 large onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 1 garlic clove, crush
- 1 teaspoon ground cumin
- 1 teaspoon ground oregano
- 1 teaspoon ground thyme
- 2 ham hocks
- 1 large tomatoes, diced
- 13 cup sour cream
- In crockpot combine All ingredients except sour cream and chopped tomato.
- Cook on low about 10 hours or till beans are done.
- Remove the hocks; cool and remove lean part of meat, discarding fat and bones.
- Return lean part of meat to crockpot and reheat if needed.
- Serve topped with sour cream and diced tomato.
