Ww Pasta Skillet Dinner
- 1 12 cups soy crumbles (the sausage type)
- 1 cup mushroom, sliced
- 1 onion, chopped
- 1 (18 1/2 ounce) can fat free vegetable soup (Progresso makes a 0 point vegetable soup)
- 34 cup bow tie pasta
- 2 cups spinach
- 12 cup reduced-fat mozzarella cheese, shredded
- In a skillet over medium high heat, cook the soy protein crumbles, mushrooms and onion for 5 minutes or until vegetables are tender.
- Stir in soup.
- Cover and heat to boiling.
- Stir in pasta; reduce heat to medium low; cover and simmer for 10 minutes.
- Stir in spinach; and cook uncovered for another 5 minutes, stirring occasionally or until spinach is hot and begins to wilt.
- Sprinkle with cheese.
