Streusel Baked Pumpkin French Toast
- 1 loaf French bread or 1 loaf brioche bread
- 6 large eggs
- 2 12 cups milk
- 1 cup pure pumpkin puree
- 34 cup granulated sugar
- 2 tablespoons vanilla extract
- 12 teaspoon ground cinnamon
- 14 teaspoon ground nutmeg
- 14 teaspoon salt
- 12 cup all-purpose flour
- 12 cup brown sugar
- 1 teaspoon ground cinnamon
- 14 teaspoon ground nutmeg
- 12 cup cold butter, cut into pieces
- Spray 9x13" dish with cooking spray.
- Cut or rip bread into smaller pieces and spread in pan.
- Whisk pumpkin, eggs, milk (I use almond milk), sugar, flavorings , salt and spices.
- Pour mixture over bread, pushing bread down so it all soaks up the good stuff.
- Cover and refrigerate overnight (or a few hours).
- In a separate bowl, mix together streusel topping (flour, brown sugar, cinnamon and nutmeg.
- Cut the butter into the flour mixture until pieces are pea-size.
- Cover and refrigerate.
- An hour before serving time, preheat oven to 350 degrees.
- Uncover bread mixture and top with streusel mixture.
- Bake for 50-55 minutes until set and golden brown.
