Avocado Quesadillas
- 1 avocado
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 1/4 c. packed fresh cilantro leaves and stems
- 1/2 c. corn kernals
- 8 corn tortillas
- 1/2 c. shredded pepper Jack cheese
- In medium bowl, mash avocado with salt and pepper.
- Stir in cilantro leaves and stems and corn kernels; spread on 4 tortillas.
- Top with shredded pepper Jack cheese and 4 more tortillas.
- In 12-inch skillet, in 2 batches, cook quesadillas on medium-high 3 to 5 minutes or until browned, turning over once.
