Avocado Quesadillas

  1. In medium bowl, mash avocado with salt and pepper.
  2. Stir in cilantro leaves and stems and corn kernels; spread on 4 tortillas.
  3. Top with shredded pepper Jack cheese and 4 more tortillas.
  4. In 12-inch skillet, in 2 batches, cook quesadillas on medium-high 3 to 5 minutes or until browned, turning over once.
