Confetti Corn

  1. 1.
  2. In a large skillet melt 2 tbls.
  3. butter & saute onions, peppers, & garlic till softened.
  4. 2.
  5. Add the rest of the ingredients and saute on medium heat till the juices from the tomatoes cook down leaving just a little juice.
  6. 3.
  7. Stir often to cook corn through ( about 20 to 25 minute ).
  8. 4.
  9. Enjoy.
