Chicken 'N Rice (Mexico) Recipe
- 4 chicken breasts
- 2 (14 1/2 ounce.) cans chicken broth
- 1 c. regular rice
- 1 can tomato sauce
- 1/4 c. minced onion
- 1 1/2 teaspoon chopped garlic
- 1 teaspoon cumin
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 1 tbsp. oil
- Fry chicken with garlic, cumin, pepper and salt till browned (about 10 min).
- In a separate pan heat oil, add in rice and onion, fry till brown, stirring constantly.
- Add in tomato sauce and chicken broth.
- Bring to a boil.
- Cover and simmer till chicken is done and liquid is absorbed, 30 to 45 min.
